Soto Lamongan recipe - East Java


Actually, there are many kinds of "soto" with them own unique, depending on where they came from, this time I will share to you "Soto Lamongan recipe" which comes from Lamongan, East Java, Indonesia. Okey, lets go to the point
Ingredients:
  • 1/2 chicken 
  • 1 lemon, take the water
  • 1 1/2 liter of water
  • 2 tsp salt
  • 3 bay leaves
  • 3 lime orange leaves
  • 1 stalk citronella, crushed
  • 3 cm galangal, crushed
  • 3 cm ginger, crushed\
  • 3 tbs oil, for sauteing
Blend:
  • 2 cloves garlic 
  • 5 red onions
  • 1/2 tsp pepper grains
  • 1/2 tsp coriander seeds, toasted
  • 2 leeks, sliced ​​1 cm
complement
  • 100 grams of cabbage, finely shredded 
  • 100 grams of bean sprouts
  • 3 hard-boiled eggs, halved
  • 50 grams of glass noodles, soaked in warm water, drained
  • 2 tomatoes, cut apart
  • 2 stalks celery, thinly sliced
  • 3 cloves garlic, thinly sliced​​, fried
chili sauce
  • 4 pieces of red chilli curls 
  • 8 pieces of red chili sauce 
  • 1/4 tsp salt 
  • Boil the chilies, then mash with salt.
How to Make

Wash chicken, then coat with lemon juice, let stand for 10 minutes. Wash the chicken back to clean, set aside. Boil chicken with salt, bay leaves, lime leaves, citronella, galangal, and ginger until chicken is tender. Remove, drain, fry until brown (not too dry). Once cool, shredded, set aside.
Saute until fragrant, remove from heat and set aside. Enter the saute of herbs and leek into the chicken cooking water, stir it.
